⭐️ Our vegan blueberry muffins are soft, light, moist, and packed with juicy blueberries. They are easy to make with only 8 simple ingredients; you can whip them up in 5 minutes.

⭐️ Ingredients
WET INGREDIENTS
1 teaspoon (3 grams) grated lemon zest
1 cup (240 grams) non-dairy milk any
¾ cup (150 grams) sugar
¼ cup (60 grams) neutral vegetable oil like avocado oil or canola oil
1 tablespoon (15 grams) vanilla extract

DRY INGREDIENTS
2 cups (300 grams) all-purpose flour
1 tablespoon (12 grams) baking powder
⅛ teaspoon salt
2 cups (300 grams) blueberries fresh or frozen
1½ tablespoon (12 grams) cornstarch

This is the best recipe regarding the proportions, (Flour - sugar-oil-milk). I use buuter instead of oil because of the taste.

I’m not vegan so I substituted the oil for butter and used whole milk. 10/10 I recommend, it came out so soft and moist ❤️❤️❤️ if you want to just bake sort of like a pound cake using this recipe just bake it in the oven for 30 mins

I just became plant-based for health reasons. I have tried several muffins recently because I love them for breakfast with plain coffee. I have had no luck until I saw this video. I knew I was gonna have success when I started to mix the batter it was luxurious and lovely. Also I love the way it filled the cups, I knew I was gonna get 12 instead of six like some other recipes that promised 12. They came out looking lovely and they taste delicious also. I did not have fresh blueberries on hand but I did have fresh strawberries on hand so I chopped them and use them and the muffins are delicious with strawberries also. These will be my go to muffins for sure. I am going to experiment with different flowers also just to see how they come out. If not, I can always go back to his original recipe.❤ thank you for getting it right!
