Blueberry muffins(makes 12):
*Preheat oven to 400°F(200°C)*

2 cups(240g) all purpose flour
1 tsp salt
2tsp baking powder
1/2 cup(113g) unsalted butter(room temperature)
3/4 cup(150g) granulated sugar
2 large room temperature eggs
1 whole lemon zest(optional)
2 tsp of vanilla
3/4 cup(180ml) of milk
8 ounces of blueberries
Place muffins in the tin

Optional: Add some sugar on top
Or streusel topping:
1/2 cup(60g) flour
1/2 cup sugar(100g)
1/4 cup butter
Pinch of salt

Bake at 400°F(200°C) for 20 minutes or until they are puffed and golden
(You can add a ramekin with water under the muffins in the oven so that they don't dry out due to the high temperature)

I've tried several Blueberry Muffin recipes but this is by far the best. I used 1/4 cup of butter and 1/4 cup of veg oil. They stayed moist and fluffy for a couple of days before they were all gone. Thanks John. I will be making the Strawberry cupcakes tomorrow.

I've made these twice now. The first time, I used softened butter, sour cream, and lemon juice using his suggestions. The second time, I used half melted butter, vegetable oil, and buttermilk following his suggestions. The second time, the muffins were so much better. They were so soft and tender with just the right about of sweetness.

In New England it’s traditional to cut the blueberry muffin in half, butter it and put it on the grill to brown it. Simply delicious. Thanks for the recipe.

I made these two days ago with the topping and they were gone in 24 hours. I did the butter/oil combination and the milk/sour cream/lemon juice and they turned out fantastic ❤

We split the butter 50/50 with olive oil and went with one tsp of vanilla instead of two. My 17 yr old son likes to add his input. Great result.

I tried this without the lemon zest as I didn't have any and used half butter, half oil. The muffins turned out really delicious, moist (even without the ramekin of water in the oven), loaded with blueberries and not too sweet.
