How to Make Tamago Kake Gohan

Tamago gohan (literally "egg rice")—rice mixed with a raw egg—is Japanese comfort food at its simplest. Start with a bowl of hot rice, then break an egg into it. Season it with a little bit of soy sauce, a pinch of salt, and a shake of Aji-no-moto, a Japanese brand of pure powdered MSG. (Like most Japanese people, I have no hang-ups about eating MSG.) Whip it up with a pair of chopsticks until the egg turns pale yellow and foamy and holds the rice in a light, frothy suspension, somewhere between a custard and a meringue.

It's one of my favorite recipes of all time, and something that can be made in minutes.

WHY THIS RECIPE WORKS:
The hot rice helps thicken the egg slightly, giving the whole dish a lighter, fluffier texture.
Beating the eggs and rice thoroughly with chopsticks introduces air into the egg whites, making them fluffier.
Soy sauce, MSG, and furikake are all umami-rich ingredients that give the dish a nice savory flavor.

NOTES:
Hondashi is powdered dashi that can be found in any Japanese market and most well-stocked supermarkets. Furikake is a seasoning mixture typically made with seaweed, dried sweetened bonito, and sesame seeds, among other ingredients. It can be found in any Japanese market.


INGREDIENTS:

1 cup cooked hot white rice (about 12 ounces cooked rice; 340g)
1 egg (plus 1 optional egg yolk)
Soy sauce
Kosher salt
MSG powder, such as Aji-no-moto or Accent (optional)
Mirin (optional)
Hondashi (optional; see note above)
Furikake (optional; see note above)
Thinly sliced or torn nori (optional)

DIRECTIONS:

1. Place rice in a bowl and make a shallow indentation in the center. Break the whole egg into the center. Season with 1/2 teaspoon soy sauce, a pinch of salt, a pinch of MSG, 1/2 teaspoon mirin (if using), and a pinch of Hondashi (if using). Stir vigorously with chopsticks to incorporate egg; it should become pale yellow, frothy, and fluffy in texture. Taste and adjust seasonings as necessary. Sprinkle with furikake and nori (if using), make a small indentation in the top, and add the other egg yolk (if using). Serve immediately

sometimes when I feel really lazy and don't want to actually cook, i'll just make some tamago kake gohan, and it's pretty good. I can't convince my family to try it, but oh well

I just entered university and I'll have to start living alone in a month. I'm not good at cooking and I'm even worse in cleaning, so I was looking for some easy to make dishes, which will make me hate my daily life less.. This suddenly popped up and I'm glad it did..

I often also add natto and green onion, then eat it accompanied with pieces and nori and/or cucumber tsukemono (Japanese pickles)

I made my first TKG this morning and the results were successful and delicious! I also added chopped green onions and ate grilled fish and nori together.
I think there are a lot of people who don't like raw eggs. However, the soy sauce and furikake removed the strange taste of the raw egg, so it wasn't as bad as I thought.
TKG is a very easy and simple food, but it is healthy and I was able to feel the deep Japanese taste in the harmony of ingredients.
Raw eggs can be very unpleasant to many people, but in fact, raw eggs are common in many traditional Japanese dishes, and a good number of Japanese enjoy their unique taste!

For anyone concerned about the raw egg: if the rice is hot enough, it will cook the egg as you stir it in. So no need to worry

I eat this daily for almost every meal. Butter, mirin, salt, and a heavy dash of togarashi. Sometimes i hit it with soy but its delicious without it.

I usually put sesame seeds on top with soy sauce and it's SO good. I'm wondering though, would it be better for me to toast the seeds?

I love any food that has eggs in it, but i really dislike raw eggs. Even just the smell makes me want to throw up. But i kinda get how the hot rice slightly cooks the eggs (I am guessing its like how the italians do it with pasta? Not that I ve ever tried that) so I am going to try this today... But I am gonna starve before I do it since I find myself more accepting of food I think I wont like when hungry

The salt is unnecessary in my perspective because you could just add more soy sauce since it's salty as well. But that's just my opinion, you can eat this however you want! ☺️

It's good, but I would NEVER use an unpasturized egg in the United States for this. Not with how our egg industry operates.
