Tamago Kake Gohan

Ingredients
* Japanese short-grain rice
* High quality eggs
* Soy sauce
* Furikake
* Ikura
Instructions
1. Add rice to a bowl along with cold water. Wash the rice for 30 seconds until the water is murky and drain the water out. Repeat this process a few time until the water runs clear after washing it.
2. Add equal parts washed rice and water to a rice cooker and let that cook.
3. When the rice is done cooking, add the piping hot rice to a bowl and crack a raw egg on top along with a splash of soy sauce.
4. Vigorously mix that until each grain of rice is coated in egg. This usually takes about one minute.
5. I like to top it off with furikake, ikura, and an extra egg yolk on top but feel free to add whatever you like.

Protip, the slight cooking from the rice won't kill off any harmful bacteria in the eggs. But in the US eggs are pasturized so they are already safe to eat. So if you use your own home grown eggs, consider processing them so they are just as safe.
