Interesting fact, red velvet didn't originally use red food colouring. Instead, they used Dutch processed cocoa powder. Dutch processed cocoa powder is just like your normal cocoa powder but it has been treated with alkaline salts to get rid of some bitterness, which causes the cocoa powder to have a bit of a red hue to it. And if you use the Dutch process a couple more times, you will get something called black cocoa, which is used to make the black biscuits of an Oreo. Thought you would like to know.
