Filipino Chicken Adobo - My Aunt's Recipe (Day 8)

Hey Besties ,
I am so happy that you're here. I know ..I said that I was going to upload a video every single day for the month of October but GIRL I have a perfect explanation as to why I went missing for a couple of days . Just make sure your notifications are on, thumbs up the video and leave a comment down below. But in todays video I'm going to be sharing a recipe that I've shared on my instagram so many times. It's Filipino Chicken Adobo and it's my Auntie's Recipe.....
GROCERY / INGREDIENTS LIST :
- chicken thighs (with the skin and bone or without )
- soy sauce ( regular )
- red wine vinegar ( white or apple cider vinegar is great too)
- onion ( small brown)
- garlic
- peppercorns ( or coarse black pepper , I like the peppercorns the best )
- brown sugar
- bay leaves ( dried)
- green onions ( optional)
MARINADE FOR THE CHICKEN ( if you have a big family like I do or you just want to make more , just use double the amounts listed below)
- 1.5 lb chicken thigh (5 - 6 pieces)
- 4 garlic cloves , minced
- 1/3 cup soy sauce
- 1/3 cup + 2 tbsp vinegar
- 3 dried bay leaves
GET COOKING :
2 tbsp oil
4 garlic cloves , minced
1 small brown onion , diced
1 1/2 cups water
2 tbsp brown sugar
1 tbsp whole black pepper (or 2 tsp coarse cracked pepper)
1. Add your marinade to your chicken in a bowl ( or zip lock bag for less clean up) . Marinate for at least 30 minutes, or overnight.
2. Heat 1 tbsp oil in a skillet over high heat if your using a wok ( I'd say medium high heat for a regular pan chileee don't go burning your house down) Remove chicken from marinade (but don't throw the marinade away set it aside) and place chicken in the pan. Sear both sides until browned – about 2 minutes on each side. No need to cook the chicken all the way through it will finish cooking when you add the liquid.
3. Remove chicken from the pan and set aside.
4. You should have enough oil left in the pan and the fat from the chicken if not add a little more oil to your pan . Add your onion cook 1-2 minutes , then turn down your heat to cook garlic ( you do not want to burn your garlic.. just saying ) .
5. Add the reserved marinade that you set aside , water, brown sugar and black peppercorns. Stir . Bring it to a boil then turn down to medium heat. Simmer 5 minutes .
6.Add chicken . continue to cook uncovered for 20 to 25 minutes , turning chicken at around 15 minutes, until the sauce reduces to a thick syrup.
7. Drizzle that chicken with the sauce and enjoy.
