Hey Besties ,
I am so happy that you're here. I know ..I said that I was going to upload a video every single day for the month of October but GIRL I have a perfect explanation as to why I went missing for a couple of days . Just make sure your notifications are on, thumbs up the video and leave a comment down below. But in todays video I'm going to be sharing a recipe that I've shared on my instagram so many times. It's Filipino Chicken Adobo and it's my Auntie's Recipe.....

GROCERY / INGREDIENTS LIST :

- chicken thighs (with the skin and bone or without )
- soy sauce ( regular )
- red wine vinegar ( white or apple cider vinegar is great too)
- onion ( small brown)
- garlic
- peppercorns ( or coarse black pepper , I like the peppercorns the best )
- brown sugar
- bay leaves ( dried)
- green onions ( optional)

MARINADE FOR THE CHICKEN ( if you have a big family like I do or you just want to make more , just use double the amounts listed below)
- 1.5 lb chicken thigh (5 - 6 pieces)
- 4 garlic cloves , minced
- 1/3 cup soy sauce
- 1/3 cup + 2 tbsp vinegar
- 3 dried bay leaves

GET COOKING :

2 tbsp oil
4 garlic cloves , minced
1 small brown onion , diced
1 1/2 cups water
2 tbsp brown sugar
1 tbsp whole black pepper (or 2 tsp coarse cracked pepper)

1. Add your marinade to your chicken in a bowl ( or zip lock bag for less clean up) . Marinate for at least 30 minutes, or overnight.

2. Heat 1 tbsp oil in a skillet over high heat if your using a wok ( I'd say medium high heat for a regular pan chileee don't go burning your house down) Remove chicken from marinade (but don't throw the marinade away set it aside) and place chicken in the pan. Sear both sides until browned – about 2 minutes on each side. No need to cook the chicken all the way through it will finish cooking when you add the liquid.

3. Remove chicken from the pan and set aside.

4. You should have enough oil left in the pan and the fat from the chicken if not add a little more oil to your pan . Add your onion cook 1-2 minutes , then turn down your heat to cook garlic ( you do not want to burn your garlic.. just saying ) .

5. Add the reserved marinade that you set aside , water, brown sugar and black peppercorns. Stir . Bring it to a boil then turn down to medium heat. Simmer 5 minutes .

6.Add chicken . continue to cook uncovered for 20 to 25 minutes , turning chicken at around 15 minutes, until the sauce reduces to a thick syrup.

7. Drizzle that chicken with the sauce and enjoy.

Ooh, that Chicken adobo looks MASARAP²!!! Your Aunty taught you well! Yes, brown sugar, and yes, chicken thighs. My grandma Dolly was from the Philippines 🇵🇭 and she would’ve been impressed!

² - “delicious“ in Filipino, specifically Tagalog. In Ilokano it’s “awan“

PS - if you ever come to Hawai’i, go to any 7-11 before 8 am and try their pork adobo fried rice with eggs and a side order of pork adobo on top…just $4.29! Oh, our 7-11s aren’t like most American ones. Makes sense we’re different…after all, we’re the only state where White Privilege does not exist ‘cause we are a state of ALL minorities, and locals have no problem reminding some folk that they ain’t special, but if they want special treatment, this ain’t the state…but we are pretty good at that equality thingy. Anyway, you can get Salisbury steak, white rice, and buttered corn $5.99, fresh Vietnamese pho with all the fixings $5.59, meat sauce spaghetti with Parmesan cheese $4.99, and a couple dozen more dishes…and it’s daily, so you’re not eating anything old. 😁

I know I’m late, but I finally made this dish and it was sooo sooo delicious!! I ended up throwing some fettuccine in since I was out of rice, and I enjoyed the noodles. I’m not a big rice person anyway. But thanks for sharing such a tasty recipe!
