INGREDIENTS:
2 lbs chicken wings
1/3 cup soy sauce
1 tbsp dark soy sauce
1/4 cup vinegar
3-4 tbsp brown sugar (optional)
5-6 crushed garlic cloves
2 tbsp neutral oil, for browning chicken wings
1 tsp whole peppercorns
2 bay leaves
1/2 cup water

Out of most chicken adobo recipe. This one is better because it is saucy and has the consistency I look for, everyone elses is too watery. The one my dad makes is similar to this, he doesn't use dark soy sauce or brown sugar, but I think he adds chicken liver makes it much tastier imo.

Can white sugar be used in place of brown sugar? Or what other substitute do you suggest?

What the differrnt of soy sauce and dark soy sauce. Authentic filipinos just use plain soy sauce this is not
