Elevated Hummus (recipe in description)

I love hummus. There’s so many ways to make it, but I used a very simple recipe with some added color and crunch!
Elevated Hummus
2-15.5 oz cans of garbanzo beans
Juice of 1 lemon
1/4 cup EVOO (more or less)
10-12 kalamatta olives, chopped
2-3 tbsp sun-dried tomatoes, chopped
1-2 tbsp pine nuts, toasted
2-3 tbsp feta cheese, crumbled
1-3 cup english cucumber, diced
Arugula microgreens to garnish
Pita chips or sliced veggies to serve
Add chickpeas, 1/2 of the olive oil, and lemon juice to a food processor. Gradually add olive oil to the food processor while blending until a smooth consistency forms (sometimes I add an ice cube if I’m not using tahini).
Spread hummus on serving plate, then sprinkle toppings all over. Top with microgreens, a drizzle of olive oil and enjoy!
