Simple and Easy Meatloaf Recipe

Nothing says comfort food better than a good old fashioned meatloaf recipe. This meatloaf is not a complicated dish. In fact, my recipe has the most basic, simple ingredients, yet still gets 5 stars all the way!

Ingredients:
2 lbs. lean ground beef
1 cup Italian breadcrumbs
2 eggs
1/2 cup onion, diced
2 tsp garlic powder
2 tsp chopped parsley
1 tsp salt
1 tsp pepper
1/2 cup bbq sauce
For the Topping:
1/3 cup ketchup
2 tbsp brown sugar
1 tsp yellow mustard

*You'll increase the oven temperature to 400 degrees F when topped with the glaze.

If you sauté the onions in a pan first, then add them to the meat mixture, you’ll get more flavor and they won’t be as visibly prominent in the finished dish.

Exactly like my dear old mom made all her life. She taught me how to make it but insisted she made it for me right up until she became ill in her late 80's. Even though i remember how to make this simple economical delicious meatloaf i have kept her handwritten recipe....from the 50s' !! Mom left us many years ago, when i make her meatloaf i pull out her handwritten recipe, just to have a piece of her in the kitchen alongside me when i'm cooking it. luv you, Mom....and thank you young lady for bringing back these wonderful memories of my mom

Thanks so much for your simple meatloaf recipe. My wife of 32 years is very sick and I am having to step it up in the kitchen. I added mashed potatoes and collard greens with some Hawaiian rolls. Great meal. Thanks again

With meatloaf, I like to multiply the recipe up to 4 or even 10 pounds of meat. Then I separate the raw meatloaf into patties (each containing 4 oz of meat-about 6 oz per patty), and freeze them 4 patties to a freezer bag, laid out flat. Packaged that way it is very quick to thaw, and the messiest part of the raw-meat work is only done once.

After thawing the exact amount you want, you can cook it in whatever shape you want. Flat patties and cupcakes cook the fastest.They also make good campfire foil meals, but my favorite method is to stuff it into green peppers. Last batch of meatloaf-stuffed peppers I lined and covered the pan with cabbage and collard leaves (I had a glut of them in the garden) to keep the moisture in.

Watched a lot of meatloaf recipes, even though I don't even cook lol. I like this one more than others because of how simple it is. Some people add a million ingredients to their meatloaf, this still looks great the way it is

I making my first ever meatloaf tonight. I added bell pepper, worstechire sauce, season salt, and progression Italian bread crumbs with some Panko crumbs also.

Oh my, I want to thank you for sharing your meatloaf with us. I'm in the Philippines and can't find good back home comfort food anywhere here. I just finished two meatloaf sandwiches made from your recipe & was just like my mom and grandma's. This is pretty much how I make my meatloaf! I have used breadcrumbs but I really like using stale, hard bread cut in pieces and let it soak in milk. Coincidentally, bbq sauce.has always been my secret ingredient! It gives the meatloaf a wonderful twist of taste! Instead of mustard, I use a tablespoon or two of apple cider vinegar.

I just followed your extremely easy directions on my family’s new favorite meatloaf. I did add green pepper’s, the suggested sautéed onions, and I used soda crackers instead of breadcrumbs. They loved the Sause that is spread on top, and said it was the cherry on top! The meatloaf looked horrible, misshapen and bumpy, but awesome and yummy, thank you!

I am an oldy and usually a disaster waiting to happen in my SMALL kitchen. This was my first attempt at a "free standing" meatloaf and when I took I out of the oven for the glaze, the loaf had separated somewhat like crevice out from the center. Perhaps I didn't mold it small enough. My loaf did seem somewhat bigger that in the video. NEVERTHELESS, there's no one here to criticize my effort except my CAT 😺😺😺LOL. GREAT RECIPE and easy for this guy! DELICIOUS!

So my Grandpa passed away recently and his specialty was meatloaf. I always wanted to know how to make it but unfortunately I never got the recipe before he passed and I wanted to try to make it in memory of him. That’s when I found this video. So I Sautéed red pepper with white onions before adding it into the mixture.. and used honey bbq sauce instead of regular bbq. It came out soooo good! Family favorite for sure. Every time I make this I will be reminded that he is looking down on me hopefully tasting my meatloaf in spirit and being proud ❤❤
