this is just how my Mexican mother and grandmother made enchilada sauce except they used chicken broth instead of water. I'm not able to ask them how to do it, so I searched for a video that would be like their method. I've looked thru a few videos and yours is just how they did it. I remembered as I watched... I couldn't remember when the flour came into the process but this video helped me remember. THX!

Great question. The only difference between self rising and regular flour is the addition of baking powder and salt. Many Allrecipes member used all purpose flour in this recipe with great success. Be sure to season with salt to taste. Enjoy!

Been looking for some good Tex-Mex sauce and Ima give this one a go. Do yourself a favor and fry the corn tortillas in oil for 30 seconds before you make your enchiladas. It adds a ton of flavor and that’s how most restaurants do it.

I just used it and my enchiladas were outstanding! It's a great recipe and easy to make. There may be better recipes for this sauce, somewhere, but I haven't found any, and it beats anything you can buy in a can.

I was looking for an old school restaurant style flavor and this is a great Tex-Mex sauce! I added a teaspoon of low sodium Knorr bullion powder and half a pkg of Sazón coriander annatto for just a little kick! Thank you!❤️👍🏽

Thank you for your question, Brett. Cumin powder is made from grinding up cumin seeds. This spices is often used in Mexican cooking.

Good basic recipe. Try these variations:

Use chicken broth instead of water.
Or, use beer instead of water.
Bump up the garlic to one generous tablespoon.
Use tomato sauce with minced jalapeno peppers already in it.
Add a teaspoon of brown sugar to the sauce.

Combine any of these variations - and enjoy!

Another suggestion after frying the tortilla for 30 seconds, set it inside the enchilada sauce and submerge it for about a minute, remove the tortilla with a spatula, set it in a baking dish, add your cheese or chicken or whatever you're using then roll using, maybe, a couple of forks. I'm gonna try your enchilada sauce with chilaquiles today. But instead of just plain water, I think I may add Knorr's chicken flavored bouillon, 1 tsp per cup of water. When sauce is done, taste before adding any salt. Happy cooking!

Just made this. In fact my enchiladas are in the oven right now. I used onion powder, because I didn't have onion salt and I used plain flour, instead of self rising. It's so good! I'll never buy the canned stuff again.

It makes enough for a decent size pan, double the recipe if you want more than one pan. :)

This recipe is so easy and I love the orange sauce you see in authentic Mexican restaurants. It make must be the white flour and oil that lightens up the red chili powder. Yum.

Oh my god that chili powder roux made my whole house smell mouthwatering. Actually I think I'll never buy the sauce again, this was so good. I used a 15 oz can of tomato sauce, some bouillon, paprika, pepper, the chili powder and flour roux and some chef merito carne asada seasoning. It made a whole lot, too.
