For anyone attempting this, DO NOT take it into the fridge straight out of the oven, that is a surefire way to fuck your fridge up. Let it cool on some tiles first and then take it into the fridge when it's closer to room temperature.

Pro tip for crème brûlée. Only use cane sugar for when you’re burning the top. White sugar is easier to burn and doesn’t look as good as cane sugar. Brown sugar has molasses which basically means that there is some liquid in the sugar which makes it hard to burn.
