As a pastry chef, id suggest putting the milk, cream, vanilla and sugar in one pan to boil for beginners. Mixing the sugar with the yolks can cause the eggs to slowly cook if not incorporated properly.

Once the milk, cream, vanilla and sugar mix is done you can slowly pour some into the yolk mix and whisk at the same time to create a "creme anglaise". Everything is now tempered so you can pour the rest of the mix in and continue whisking until ready to distribute between ramekins.

The best sugar to use for brulee when torching is "demarara" as its thick and crystalizes nicely imo.
