Pickled Red Onion 😍 This is something I think everyone should make and have in their fridge. It’s SO simple and tastes absolutely delicious on top of all your savoury meals. Try it and thank me later 👏

Makes: 1L jar worth

Ingredients:
3 medium red onions
1 cup water
1 cup white vinegar
1 tsp salt
1/4 cup sugar
Optional: 1 tsp peppercorns or pickling spice blend, 2-3 bay leaves

Method:
1. Cut off the ends of the onions, peel them then slice into thin pieces.
2. Add the water, vinegar, salt and sugar into a saucepan. Stir and heat on medium until dissolved.
3. Pack your onions into a clean and sterilised jar. Pour the liquid over and allow it to cool at room temperature before putting the lid on and transferring to the fridge.
4. They will be ready to enjoy in as little as 1 hour but I'd recommend letting them sit for at least overnight before enjoying.

NOTES:
- I’ve tried without salt, still tastes great! I’d say this recipe is very much up to your own personal preference, so adjust everything accordingly
- Do I have to add sugar? No, you don’t. But I think it tastes better with it. Feel free to add less/more to taste. Or omit it completely.
- I'd avoid using jars with metal lids, as you'd have to put a layer of cling wrap/film over the mouth of the jar before putting the lid on since they will rust, so I’d recommend proper food preserve jars to avoid this (eg. Glass lids and rubber seals or metal spring kind of seals).

Make sure to slice them like the video and not length ways as they will be more tender.
