RECIPE (4 servings, 30min prep time):
-2 eggplants
Cut in big chunks.
Add a generous amount of salt and let it sit for 10mins.
Drain, wash and pat dry.
-2 Tbsp oil
Fry in oil until they become soft and charred, then remove from the pan.
-3 cloves garlic
-a thumbsize piece of ginger
-2 spring onions
Finely chop everything, then fry for 2mins before adding the eggplant again.
Sauce:
-4 Tbsp soy sauce
-4 Tsp sugar
-2 Tsp corn starch
-some water to thin it out
Mix and add to the eggplant.
Stir and cooked 1-2mins until thickened.

i hated eggplants until i tried them fried at a chinese restaurant!! seasoned & fried eggplants are so good, so true when you said eggplants love oil

A very popular Romanian recipe is eggplant dip/spread (salată de vinete), you can give it a shot, people here go crazy for it. Serve it with some red onions, it's tasty.

a restaurant I used to work at used to marinade eggplant in sunflower oil and ramen noodle seasoning with fresh diced red bell pepper then oven bake. It came out divine. Went as an amazing topping on our power bowl.

My dad would make steamed pearl eggplants for me.

Steamed and drained, the topped with crispy garlic and garlic oil, springonions, and soysauce.

Egg plant is my favourite vegetable. I can eat them everyday. I cannot have enough of them. My mom makes a salty sour version of egg plant using curd lemon juice n a lot of spices. I love it.
