Great recipe. One of my hacks with eggplant is to microwave them so they are partially cooked before adding to the fry pan. It absorbs less oil and cooks faster.

If you are making a big batch, here are some tips: Divide it into 2 or 3 portions to distribute the cornflour evenly, and use a non-stick wok or pan. I made the mistake of doing a big batch in a stainless steel wok and the loose flour started sticking to the wok and began to burn. I managed to salvage everything by transferring them in 2 batches into a non-stick pan and they tasted quite alright.
