I cooked this yesterday and can recommend it. Although there was a small kitchen Waterloo for me yesterday. I had too little oil in the pan, so the eggplants stuck. In addition, I cooked them for too long and this made them too soft. Last but not least, I used too much garlic, so that you tasted almost nothing of the eggplants. Finally, I totally salted the tomato salad made with it. Well: There can be not only great moments in the kitchen :)

Eggplants are one of those vegetables that I just don't know what to do with besides throwing them in a tomatosauce or deepfrying, and breading is such a hassle! I'll give this a go.
