Ingredients:

2 small Chinese eggplants (10 oz. / 300 g)
1 teaspoon salt
1 tablespoon cornstarch
SAUCE
1 tablespoon light soy sauce
1 tablespoon water
1/2 teaspoon dark soy sauce
2 teaspoons sugar
1 teaspoon cornstarch
STIR FRY
2 1/2 tablespoons peanut oil
1 teaspoon minced ginger
3 cloves garlic, chopped

Delicious!! I bought a discount bag of mixed produce from my local market for $1. It had 3 Chinese eggplants, 2 cukes, 2 green peppers and a poblano. I have never in my 65 years of life knew what to do with any eggplant. I googled and this recipe is what sounded the best. OH MY. This is such a delightful vegetable dish. I need to buy more eggplant!!!!😁 The garlic is a must.

Ich habe gestern das Kochbuch gekauft, nachts noch Rezepte gelesen und heute früh Kung Pao Soße zubereitet. Reis ist auch schon gekocht und heute Mittag stelle ich das Gericht fertig mit Gemüse und Shrimps. Die Soße pur mit Reis schmeckt schon fantastisch! Danke für dieses wunderbare Kochbuch! 😋

Omg i just tried it just now and it’s absolutely delicious!!! The coat of starch is slightly crispy yet chewy, and blends well with the softened eggplants. The sauce is delightful as well! Goes very well with rice. Thank you for the recipe!
