Frittata is one of my favorite one pan breakfast dish. Everyone enjoys a good frittata in our home and there are so many variations you can do; no rules!!
It is also a good pantry cleaner with all those little leftover veggies you want to finish so you can make space and grocery shop for next batch🫤.
This one uses: 2 large eggs, 1 tbsp feta, chopped 1/4 cup onions, 1/4 cup bell pepper (of your choice), 1 small tomato or 3-4 cherry tomatoes, 1 small boiled potato, hand full of baby spinach. For spices you need: 1/8 tsp garlic powder, 1/8 tsp paprika, 1/4 tsp parsley (fresh or dried, I used dried), salt and black pepper to taste.
Sauté all the veggies with spices. Beat your eggs with feta, black pepper. Add to sautéed veggies. Swirl around your pan to evenly distribute. Turn your flame to low. Cover you pan and let it cook till center is firm. And that's it!!
