I made this today...took some license with the ingredients to use up some things I had in the fridge. Also added some Johnsonville Maple Sausage Strips (chopped and cooked) so it isn't all veggies. Really delicious. I really appreciate John's channel. Being a one-person household, you sometimes get in a rut with what you prepare for meals. With John's recipes, I haven't made that in a while....this has really brought more variety to my meals, the recipes are not hard, and everything can be split into portions for future meals. Love this channel, John! Thank you!!!

I make frittatas frequently for brunch, and instead of fresh bell peppers I used roasted red peppers, which add a nice flavor and color, too.
