For a majority of my life I thought I was just constantly apathetic because I could never put words to how I feel. I do have periods of apathy, but alexithymia helped explain so much about myself.

My son has it, it's caused huge issues. He'd agree to going out somewhere to someone else or even services/teachers without being able to think is it something he can do, wants to do he'd say yes then get me to call and stop it once he realised what he actually really doesn't want to. Sometimes stopping the conversation and saying "right, we will do it now, would that be OK?" suddenly makes him panic and realise actually he'd rather say no. This is something I think people need to give some autistic people barrier time, time for them to decide for a few days not instantly.

I thought everyone needed to think about emotions after the fact...

And then if you take few seconds to process your own felings and thoughts before speaking, people who think faster will talk all over you. 😢 That or they just repeat it louder because they think you didnt hear them. 🙄😅
Been there too many times.

Can it also be where if something happens to you you don’t think u feel upset or angry and it takes a few days to weeks of being snappy and irritable to realize ur upset and angry and then another few days to realize why?

Very good explanation. I've so struggled with this, along with my auditory processing disorder which also causes a delay in my response. I feel like I'm constantly behind and lost in any emotional conversation.
