Wonderful video. I think the world needs a lot more clarity on food. How it's made, where it comes from, and how that truly effects our bodies.

Sometimes, I really hate this channel. I learn so much and can't help but share it, which makes people hate me. 😂 Thanks so much for this. I LOVED IT!

6/7 people in my family are either gluten intolerant or coeliac. I've grown up with it.

This was a really helpful video, thanks! I think a lot of people dont realise how modern wheat is produced and what goes into the production. Make bread at home, learn to make sourdough its the best bread ever. Experiment with spelt, kamut, emmer and einkorn, they all have a slightly different taste and texture. Delicious.

As a "celiac", I am patiently waiting for conclusive research that some sort of wonderful gut bug will take care of the gluten problem. It is so very difficult to not get "glutened" and to find healthy alternatives. I am avoiding rice like the black plague because of the arsenic problem, and it is in almost everything labeled, "gluten free."

My father and many of his siblings (he's one of seven) have Celiac Disease. Since I've had digestive issues my whole life, I was tested, but because I'd already been off gluten for a little while before the test, my results may not have been accurate. I had gluten antibodies that showed up, but not enough to be classified as a Celiac. But, I definitely have a gluten intolerance. I've been off gluten for years now. One odd thing that cleared up was I used to get painful, bloody, scabby sores deep up inside my nose. I no longer get them. I would love to trust that authentic (with starter) sourdough would work for me, but I'm nervous.

I love this series! I'm not cealiac but I've non-tested gluten sensitivy and been on a gluten free diet which did wonders for me and my family. I wonder if people with severe eczema like me tend to have more food sensitivity in general, especially from the most processed ones. Thanks for the tips and references!

Wheat and sugar can trigger depression in people. I am gluten intolerant and feel so much better without it - I have tons of energy and am more productive. After eating pasta I have a hard time to stay awake.

Great work, thank you. I eat sourdough exclusively. Never heard of that bread your eating there at the end? Heritage Sourdough huh? Will start with that kind now, 💚🌱💚

Celiac disease has been around pre-industrial times —- before pesticides and GMO. It took a European doctor — coming to America to ask “Where are all your Celiac patients?” ... Doctors in US were ignorant about it and still are today — although many are becoming more aware which is why there is greater diagnosis of it today.

A informative and interesting video even though I don't have any intolerance to gluten Celeriac disease, it will help me understand more for those that I do know that do have either a intolerance to gluten or Celeriac disease.
