6 red potatoes, unpeeled
3 Tbs white sugar
1/2 teaspoon salt
1/4 t black pepper
1/4 t Oreganos
2 Tbs apple cider vinegar
1 teaspoon yellow mustard
1 cup mayonnaise or salad dressing
1 small onion, finely chopped
1/4 cup chopped celery
1/4 cup green pepper
1/4 cup chopped dill pickle
2 hard-boiled eggs, peeled and chopped
Salt and pepper to taste
Scrub and wash potatoes cut into 1" cubes, place into pot, cover with water, add salt and boil for 12 minutes till tender. Rinse in cold water to stop the cooking and drain.
Boil eggs, peel
Finely chop onion, green pepper, celery and pickled
Dressing mix mayo, mustard, vinegar, sugar, Oregano, salt and pepper till well combined.
Place potatoes and other vegetables in large bowl, add egg chopped, pour dressing and mix with a gentle stir to not break up your potatoes.
