This is the best recipe I have found for making a good Amish deli style potato salad. The potato salad dressing is cooked and makes a delicious creamy dressing. Just in time for the summer time and Holiday get togethers. This Amish deli style potato salad is a great cold side dish for any sandwich or meal. Everyone will love it. Enjoy.

The BEST Amish Deli Style Potato Salad Recipe

INGREDIENTS:
3-4 pounds of diced cooked potatoes - I used Russet
1/4 to 1/2 cup finely diced onion
1/2 to 1 cup finely diced celery
3-4 chopped hard boiled eggs
2 tbsp. chopped dill pickle or sweet relish
1 cup mayonnaise
salt and black pepper

Dressing:
2 eggs
3/4 cup white sugar
1 tsp. cornstarch
1/2 tsp. salt
1/3 cup apple cider vinegar
1/2 cup milk
1 tsp. dry mustard
3 tbsp. butter
*Place above ingredients in medium saucepan and whisk together.
Bring to a boil on medium heat stirring constantly. This will take about 10-15 minutes.
Once thickened, remove from heat, cool to room temp then refrigerate until cold.

Once cold, add mayonnaise and stir and add to potato salad.

Stir all ingredients together and refrigerate for at least 4-6 hours, overnight is better!

Enjoy.

I make it the same way with the exception of adding sweet pickles instead of dill and I also like about a 1/2 tsp of celery seed added too.
After watching a lot of your videos I'm finding we cook very similar and use almost identical ingredients. It must be a Pennsylvania thing. I grew up eating a lot of Pa Dutch and German foods and all the women on both sides of the family were all great cooks. The men were great hunters and brought home the meats, the women cooked it up and it was always delicious.

Wow. Never in my long life gave I ever made a cooked dressing for potato salad. I DO love russet dice they break down slightly. Again I am going to try this!!!

Yum yum yum. I so love potato salad ! The dressing was all new to me and didn't look complicated at all. We didn't make no potato salad last year so hopefully this summer we'll whip up some and this recipe should be one to make. Thanks Tess. I'm drooling now 👌👍😃

That’s how my grandmother made her’s. But she put her mayonnaise in a separate bowl and she would add pickle juice her spices and a little bit of sugar then her very secret ingredient yellow food coloring. My grandmother hated mustard so she used yellow food coloring in that bowl instead of mustard. Everybody in the family thought she had the best mustard potato salad there was and there was not one drop of mustard in it LOL

I’ve been trying to replicate the potato salad I buy from a Mennonite deli/bakery near me. This sounds like this might be the recipe I was looking for! Silly question... what type of mayo do you use? Store bought or home made? I don’t think I’ve seen a mayo which was so white in color. 😃 I’m definitely trying this recipe on the weekend!
