1. Egg Bowl & Mayo Shrimps Breakfast 

Ingredients
Egg bowl
・A bowl of rice
・Spicy cod roe
・Shredded shiso leaves
・1 Egg
・A pinch of Sugar

Mayo shrimps (1-2 servings)
・1.7 oz (50g) Shrimps
・1tbsp Potato starch
・1.5 tbsp Mayonnaise
・2 tsp Ketchup
・2 tsp Milk
・1 tsp Sugar
・1/2 tsp Lemon juice

Braised eggplant (2-3 servings)
・9 oz (255g) Eggplant
・2 tbsp Sesame oil (or your favorite oil)
・Ginger slices
・0.6 cup (150ml) Water
・3.5 tbsp Mirin
・1.5 tbsp Soy sauce
・1 tbsp Sake
・A pinch of Dashi powder
・A pinch of Salt
・Myoga ginger (topping)
・Shiso leaves (topping)

Vegetable miso soup (2 servings)
・2.8 oz (80g) Kabocha squash
・1.7 oz (50g) Daikon
・1.4 oz (40g) Carrot
・1.7 cup (400ml) Water
・1/2 tsp Dashi powder
・2 tbsp Miso paste

2. Homemade Takoyaki

Ingredients (for 32 takoyaki)
・7 oz (200g) Flour
・2.5 cups (600ml)
・1 Egg
・1 tbsp Dashi powder
・1 tbsp Soy sauce
・1 tbsp Mirin

・3.5 oz (100g) Octopus
・Green onion
・Red pickles ginger (Beni-shoga)
・Tempura bits (2 tbsp + 2 tbsp Water + 1/2 tsp Rice vinegar)

Topping
・Okonomi sauce
・Mayonnaise
・Dried green seaweed (Aonori)
・Dried bonito flakes

I visited Japan many years ago. I was lucky enough to stay with a family in Osaka for 2 weeks. Takoyaki was one of the best street foods I have ever eaten. Thank you for such a great tutorial. The eggplant dish looked very yummy as well.

Yes, it's called cake flour here in North America. It is used for tempura because it has less gluten than all-purpose flour, giving a more tender result.

I don't think I could ever eat octopus, but the process of making takoyaki has always fascinated me. I love watching how something that starts off so messy-looking ends up as perfectly round balls.

I bought a takoyaki pan last fall from Amazon and we had a takoyaki party at our cabin after a day of snowmachining this past winter! We used octopus we caught in Prince William Sound during the summer (We are in Alaska). It was SO delicious! All our friends loved it!

Finally managed to find your channel from Instagram! Thank you for sharing these recipes. I'm Filipino but I grew up eating a lot of Japanese food since I used to live near our own Little Tokyo. Sadly my husband does not enjoy eating eggplant a lot but I hope your recipe can change his mind.

Actually I bought two Takoyaki-pans in Doguyasuji in Osaka...the flat-bottom one because I have a ceramic glass cooktop and it works great 🙂
I do not think it is available in Europe and in usa (exept for "Little Tokio" in San Francisco maybe).

There's a Takoyaki plate (for gas or electric stove) sold in a Japanese supermarket in London, so I think it would be easy to find in England. You can also get it sent to places in the EU. They also have frozen takoyaki.

I live in norht Germany. There exist a sweet dish namen Quarkbällchen, for Quarkbällchen you use a pan, which look like your takoyaki pan.

Tastier eggplant, shrimp dishes and rice.
I have the〔small weask〕from muji. Except that i always put my money into〔uniqulo, sony and stationery〕. I am another set from your teaching by selecting 〔miso〕adding vegetables and water equally good soup.
About potato starch and mirin i got it.
I really want to study〔dash powder〕.
Please correct me if you can. As foreigner i have to tell🤔you your cooking channel is me typically easy to learn and all edible!💝
