I love sweet potatoes. The violet ones are my favourite. I normally boil my sweet potatoes whole in order to maximize the nutrient content. Just remember to pierce about 10 times into the sweet potato before boiling. :-D

Goes to show that certain vegetables are best cooked in their own unique way to assure best healthier results. Some even best eaten raw for a better nutritious value.

I microwave them - 4 minutes on reduced power. Crunchy w/ a nice bite. Delicious in salads.

Thanks for this video.  Sweet potatoes are actually great when juiced and taste similar to carrot juice.

You really do learn something new every day- it's not often you hear a vegetable is better for you boiled rather than roasted lol

Microwaving works great for me, and it is ready in 7 minutes.

I would like to know how microwaved sweet potatoes compare nutritionally and with respect to spiking compared to boiled or baked? Thank you for the good work you do.

From a nutritional standpoint, yes, boiling sweet potatoes is good for vitamin A retention, but I bake mine specifically because I can reach vitamin A maximum fairly easily.  For me, baking sweet potatoes is the way I can eat a lot of them.

I microwave mine. Pierce with a fork. Microwave on high for 4 minutes, turn them over and microwave on high 4 more minutes. Done & delicious!

Microwave for 6 minutes(1-2 large), works good. Unless large amount is cooked, bake it or boil it.

Here in Hawaii we usually eat the purple ones. I haven't had an orange one in years and I don't think I've ever had yellow. Also if you're from Hawaii and you are craving laulau and you don't mind having salt from time to time, I've found that they are delicious when used in place of the meat.
