Just a suggestion, maybe if you make this again add a little wine, it doesn’t make it taste like wine, it just gives it a richer risotto taste and brings out the cheese flavor more

idk who told you to remove the gills but they're totally edible. throwing them out is just wasteful as they don't affect the texture or taste. the stem is also edible, although it's slightly tougher. you can chop it into smaller pieces or save it for stock

It looks great but I didn't know you had to take out the gills? I wouldn't do it though, it seems like a waste. And if you cut them smaller, you can sweat the stems down with the onion and garlic for more mushroom flavour :)

You should try making barley risotto. Just make a nice tomato or use pasta sauce with 1 cup of water and add barley. Great recipe. Add mushrooms, spinach or whatever your heart desires. Love you!
