Imo - you gotta let it sit in the marinade, until you lose patience, then press them down to really get a nice sear and get the moisture out.

A butter baste also goes a long way!

It might be good to leave it in the marinade before cooking and maybe sear it longer to get a better crust it might taste better. I’ve found from cooking steaks that tends to be a good way of going about it
