I had Japanese Creamy Mushroom Risotto in Taiwan and FELL IN LOVE. I already love risotto, but adding soy sauce, dashi stock, and using shiitake mushroom sold it for me. If you like fusion food, this recipe is for you! I am using instant Dashi today, but you can also make dashi from scratch as well. You can also add other types of mushrooms, such as emoji and oyster mushrooms. For those that are lactose intolerant, skip the heavy cream and use lactose butter and cheese instead. There are so many alternatives when it comes to risotto so that you can customize it base on your preference!

I’ve made this before thinking I was the one to have ever come up with this combo. I used Japanese sushi rice because it’s small and starchy similarly to Arborio rice. Next I also used dried shiitakes to make a mushroom broth and added dashi powder to the stock. I used the rehydrated mushrooms instead of fresh and sautéed onion ginger sake mirin and soy sauce but skipped out on the cheese and milk to keep it vegan. My partner liked it better than the risotto at their fancy restaurant job where they make traditional risotto

The sake and dashi produce an even creamier consistency. This also elevates the umami. I prefer this type of risotto. Just don't tell any Italians this is risotto lmao.
