Incredibly Meaty Vegan Mushroom Schwarma

Vegan Schwarma 🥵🤤🔥

Who wants to get involved?

Ingredients:

600 g cluster oyster mushrooms
oil
vegan Greek style yoghurt
(Optional) vegan siratcha mayo

Seasoning mix:
1/2 tbsp sage
1 tbsp smoked paprika
1 tsp All purpose seasoning
2 tbsp garlic powder
1 tbsp oregano
1/2 tbsp cumin
1 tbsp onion powder
1 tsp cayenne pepper
1 tsp salt and black pepper

1 tbsp water
1 lemon, squeezed
2 tbsp harissa paste
80 ml maple syrup

Salad:
1/2 red onion, sliced
a bunch of coriander, chopped
tomatoes
cucumber
2 tbsp dry seasoning mix

Method:

1. Make seasoning mix

2. Pre-heat oven to 200C.

3. Keeping oyster mushrooms in large clusters, add oil and gently rub with half of seasoning mix, being careful not to break apart into small pieces.

4. Save 2 tbsp of seasoning mix for later (salad) and then add lemon, water and maple syrup to remaining mix. Mix together and set aside.

5. Add oil to a hot skillet, add a couple oyster mushroom clusters and press down while frying. Flip mushrooms and press down again. Fry until browned. Leave to rest for 5 minutes.

6. Add fried, pressed oyster mushroom clusters to a skewer. Brush generously with liquid seasoning mix and place on a baking tray. Put in oven to bake for 15 minutes.

7. Remove mushroom kebabs from oven and slice.

8. Make salad.

9. Serve with flatbread, mushroom kebab pieces and vegan Greek style yoghurt.
