Plantains are closely related to what humans selectively bred to create bananas as we now know them. It's a very similar plant, only over time bananas were cultivated primarily for increased sweetness. Plantains will get pretty much just as soft over time. As they are harder to start with, they can be allowed to ripen until they're literally black all over, at which point whereas bananas would be bad, plantains will be at a texture and sweetness comparable to bananas which are barely ripe. Overall this makes them more versatile because they range from firm and bland, to creamy and sweet. Plus they can be refrigerated and have much longer shelf life.

I have a friend from Nigeria. His wife would make his lunch for work every day. I always told him that his food looked so good so he had his wife make some extra for me. This is the rice that she made. It was soooo good! I have to admit that it was definitely one of the best rice dishes I have ever had. Thank you for the recipe!!!

The dish originated in Senegal/Gambia in the Joloff Empire. The rice is named after the Empire. Prior to colonialism, the continent of Africa had different borders than today. The dish is most popular in what is now known as West Africa. Each country in that region claims their version is the best. Senegal also has a version of Jollof Rice that is white. The dish is not traditional made plain. It usually has several different types of meat cooked in the rice and not served on the side.

As a bonus: some of us would char/broil the peppers and tomatoes before blending. Adds to the smoky flavor, which is usually the best kind.

My Nigerian friend uses chicken broth instead of water to cook the rice and finishes to cook the chicken in the oven. Highly recommended 😋

As a cook. I would cook the red sauce even further, be patient and cook it longer before adding the tomato paste. Cook the sauce stirring frequently until it has gotten a deep darker red color and then add the tomato paste and do the same but for a shorter time. This will remove all the acidity from the tomatoes and tomato paste and give you an amazing flavor. Also your rice was already mushed up by the end. To avoid that you need to measure a maximum of two cups of water for each cup of rice. Then boil the rice with the sauce and water on high heat stirring slowly every now and then until almost all the water has evaporated, then cover and lower the heat as low as your stove can go and set a timer for 20-25 minutes.
You will have the most fluffy delicious rice. Cooked all the way through.

I'm from Colombia, finally realised what 'tajadas' would be called in the english language. I had no idea it was something that was eaten in other parts of the world aside from latin america. I imagine you also make 'pataconas' with that or something similar just like here. The world is so cool, you learn something new every day

My Guatemalan aunt made this for me once, but she added beans to it. The more I look into it, the more I realize how Latin American and African dishes are so similar, including our love for plantain

I grew up eating this, and didn’t realize that’s what he was making at first. I’m so used to it that didn’t expect a childhood dish of mine. It looks great though!
