Actually, “Wild Rice” which is really a seed, is the best alternative I’ve found… I mix it w/ veggie rice (cauliflower rice) and sometimes brown rice or not at all. No spikes, and mixing it like that really FLUFFS it up and is really satisfying 😊

I never thought of using barley. I do use cauliflower rice and it works out great if you can get a lot of the moisture out

I have had this battle with my MD for years. I eat Basmati Rice for years almost every meal. For some reason it has very little effect on my Blood Sugar. Ran several test 2 or 4 hours after eating . Blood sugar goes up depending what I eat at same level with or without Rice. Dr. now agrees with me. Been a diabetic for over 15 years. A1C now at 6.5 with Trulicity. Was at 7.5 without Trulicity. Not overly active and 72 years old.

I use the cauliflower rice with curries and enjoy that.

In the past I have eaten buckwheat which has a lively nutty taste and a GI of between 30 and 35.
It was great when added to mushrooms, onion and herbs like parsley and dill, sometimes with sprinkle of paprika. Good at breakfast as well with a poached egg on top.

Thanks much for your explanations concercing diabetes, which helped me so much. Since a long time I am eating low carb, now intermittent fasting, taking supplements in good quality, sport regularly and I am so happy, my blood sugar went down.
Keep on your good work, which is educating so many people with diabetes (me included). Here in Germany you can't find a doctor, which really has a good and solid knowledge of diabetes.

Great video. In our part of the world, rice is boiled until it is little soft, and then strained, thereby extracting a lot of starch from the rice. Only then it is put on the table..

For those who just cant stop eating rice, perhaps can switch to basmati rice? (since its like 50-58gi). And consume at a decent proportion.

I am so happy I found your channel. I love every video so far. I am recuperating from a bad case of Covid and 8 days in the hospital. Now dealing with high glucose and educating myself to bring it back down. I was pre-diabetic before all this, but the numbers are now horrible. You are a great teacher, easy to understand. Glad to know this. I don't care for brown rice and white rice is my worse enemy when it comes to diabetes, but have tried quinoa and riced cauliflower. I actually enjoy them.

I am not a diabetic and want to avoid becoming one, so I switched to a low carb lifestyle 2 years ago. I consume no more than 50 net carbs a day and have lost 94 pounds, no longer have gastrointestinal distress, and even those white bumps around my eyes that are caused by high cholesterol have disappeared (without medication). The solution to our obesity problem starts with a diet devoid of inflammatory, highly-processed, high carbs foods.

I just tried barley in place of rice with a spicey & saucy prawn dish, it worked!
