This easy brussel sprouts with bacon recipe is a delicious side dish, even for the most novice home cook. Brussel sprouts in the oven and roasted until they are charred and crispy the outside and tender on the inside with a little help from a little bacon and onions. The crispy brussel sprouts don't need any help and can been eating without anything else right out of the oven for dinner but with bacon and onions will get even the pickiest of vegetable eater to be asking for more!

Crispy Brussel Sprouts with Bacon

Prep Time: 5-10 min
Cook time: 25-30 min
Total time: 30-40 min

EQUIPMENT
· cutting board and chef knife
· large mixing bowl
· medium sized frying pan
· 2 small bowls or containers

INGREDIENTS
Produce & Protein
· 10-20 Brussel sprouts, trimmed and halved
· 2-3 oz bacon, cut into small pieces
· ½ onion, sliced
· 3-4 garlic cloves, finely chopped
· a few sprigs of parsley, leaves removed from stems and finely chopped

Pantry Ingredients & Seasoning
· Olive oil
· 1-2 tsp Chef Ange Base Seasoning (see page #)
· salt & pepper
· 1-2 tablespoon white wine vinegar

DIRECTIONS

Preheat oven to 375F convection or 400F regular oven

Ingredient Prep
1. Trim Brussel sprouts and cut in half. Remove any discolored leaves and place in a large mixing bowl.
2. Slice onions
3. Crush and chop garlic
4. Cut bacon
5. Place prepped onions, garlic and bacon in small containers for stovetop assembly

Assembly
1. Preheat oven to 375F convection or 400F regular oven
2. Toss Brussels sprouts with olive oil and base seasoning
3. Arrange on baking sheet with cut side up. (Line baking sheet with silicon mat, parchment paper or aluminum foil to save on clean up)
4. Place tray in oven for 20-30 minutes or until browned and loose leaves are slightly charred. (Periodically check in on the Brussels sprouts in the oven and give the pan a shake and/or turn the pan to get even browning).
5. Brown bacon pieces in a frying pan over medium to medium high heat. Move pieces around in the pan to get even cooking.
6. After fully cooked, remove pieces keeping rendered bacon fat in the pan.
7. Reduce heat to medium and add onion slices to bacon fat and sauté until they begin to brown. (If not enough bacon fat in the pan, add a little olive oil.)
8. Add garlic and sauté 1 min.
9. Add heavy splash of white wine vinegar and let evaporate a little bit.
10. Shut off heat and season with salt and pepper
11. Return cooked bacon to the pan and sprinkle with chopped parsley
12. When Brussels sprouts are done, transfer to large bowl and toss with bacon and onion mixture

My husband and I are in our 80's. We are under quarantine because of the virus. Our son has been grocery shopping for us. I told him to bring a few brussel sprouts home for us. He bought a big bag. I didn't know what to do with them. After watching your video, I know I am going to try it, as it looks good. I have gardened all my life, and like all vegetables, except brussel sprouts. They are my husband;'s favorites though, and yours looked so good, maybe I'll try them. Thank you for sharing.

Used to love steaming chopped Brussel sprouts in a steamer basket. Then stir-fry with some chopped cocktail onions, garlic, mushrooms, throw in some chopped pepperocini and feta cheese, serve in a warm pita-pocket with some warm falafel and hummus.

I searched dozens of online recipes, but this one stood out. I have had similar preparations in trendy restaurants but this one was on another level. The only adjustment made was the addition of 3-4 tablespoons of maple syrup at the end which I think provided great balance considering the recipes addition of wine vinegar at the end. Brilliant job chef Ange. This will be my future default for brussel sprouts.

Made these for my husbands family dinner a couple months ago. It was such a hit many of his family members that don’t normally eat Brussels loved it, and his grandma asked me for the recipe! Making it soon for my friends.

Thank you, this looks lovely. I like to make my Brussels sprouts with red onion and deglaze the pan with either white wine or chicken broth. Adding in that crispy bacon, minced garlic and parsley is so appealing. Reusing the bacon fat is just how my grandmother used to cook. Bravo!

So, trim the sprouts and slice the onions. Mind you, that's a brilliant trick with the bacon. Looks delicious.

I love this recipe. I've been making it a long time almost exactly like this. I skip onions though and use shallots. At the end when it's still hot, I take it next level with a dash of nutmeg, a splotch of butter, then crushed walnuts and tossed with a bit of maple syrup. (Yes, I'm Canadian lol)

I had this dish at a restaurant here in Seattle a few years ago and it was so delicious I wanted to be able to make it at home. Delicious side. I started making these years ago when diabetes made look for healthier alternatives. Highly recommended for taste and value. This can also be made in a frying pan. Thanks for bringing this tried and true favorite to us.
