HEAT YOUR PLATES PEOPLE! 30 sec microwave, warm oven in a tea towel, soaking in hot water in the sink. If you wonder why restaurant say, “careful the plate is hot!” Its cause they are fresh from the dishwasher or (like at the place I worked) they HEATED the plate. Keeps your food nice and toasty even after it’s rested.
Edit: microwave is the least consistent of all these options. Just use the oven/hot water.

I’ll give it a try. Resting and then cuttting it nicely makes it look nice but it’s always cold ☹️

Resting ALSO allows the meat to re-absorb juices that got lost in between the muscle fibers. Cutting the meat too soon lets all that juice spill out. Just look at the cutting board!

Three of the best tips:

1. Don’t fire your steak straight from the fridge; let it sit out to bring to room temp. This will help you cook rare/medium-rare quickly, without having a cold middle.

2. Let your steak rest, just like he said.

3. Something a lot of people just never think of or do… plate it on a warm plate. That’s good advice for any hot meal. Quickest way to get your food colder is to dump it on a colder plate than the meal.
