Ingredients 👇

🔽 Tofu steak
- 1 firm tofu
- corn starch or potato starch
-2 tbsp sugar
-2 tbsp soy sauce
-1 tbsp vinegar
-1/2 tsp kochujang (Korean red paste) *optional

🔽 Eggplant & green paprika miso stir-fry
- about 200g (7oz) eggplant
- 2 green paprika
- sesame oil
- 2 tbsp sugar
- 1 tsp bonito powder
- 2 tbsp soy sauce
- sesame seeds

🔽 Egg drop soup
- 1 egg
- 1 tbsp corn starch or potato starch
- 3 tsp Chinese chichen essence powder (雞精)
- 1/3 tsp salt
- 1 tsp soy sauce
- green onion for topping

🔽 Ankake rolled omelette
for the rolled omelette
- 3 eggs
- 50ml (1.7oz) water
- 1/2 tsp bonito powder
for the sauce
- 100g mushroom or 1 pack shimeji mushroom
- 1 tsp bonito powder
- 200ml (6.7 oz) water
- 3~4 tsp soy sauce
- 1 tbsp corn starch or potato starch
- 1 tsp ginger, grated

🔽Salmon miso butter stir-fly
- 100g (3.5oz) cabbage
- 50g (1.7oz) shimeji mushroom or normal mushroom
- 200g (7oz) salmon
- 1 tbsp corn starch or potato starch
- 2 tbsp cooking sake
- 1 tbsp miso
- 1 tsp sugar
- 1 tsp soy sauce
- 10g (0.3oz) butter
- sesame seeds

🔽Squid garlic butter stir-fry
- 2 cloves garlic
- 200g (7oz) cabbage
- 1 squid
- 1 tsp bonito powder
- 2 tbsp soy sauce
- 1 tbsp cooking sake
- 10g (0.3oz) butter
- green onion for topping

🔽Miso dama
- 150g (5.3oz) miso
- 2 tbsp bonito powder
- 100g (3.5oz) green onion
- 4 tbsp dried wakame
- 20g (0.7oz) fried tofu

The boiled egg-mistake reminded me of the first time I went to Japan 10 years ago. I didn’t read or speak any Japanese then so every time I bought food at the supermarket felt like an adventure, haha. I remember one time buying what I thought was just regular bread-rolls but when I bit in to them they were filled with anko. “What is this?!”, haha. Another time, a couple of years later, I went to the supermarket looking for honey. I couldn’t remember the Japanese word for honey, but I remembered that it was “ha-something-mi-something” and thought “it’s a liquid from flowers, right?”, so I asked the staff “すみません、鼻水はどこですか?”. That went great, haha. I’m Swedish, but I live in Portugal right now (so we’re neighbors!). I don’t speak Portuguese, but the food is very similar to Swedish food so it’s easy to buy food here without knowing the language. Very different from when I was in Asia. But I kind of like that adventure of not knowing what you get though. It’s a good way to try new things because you can’t judge a food beforehand when you don’t know what it is. Sometimes if you know what it is, you might think “No, I don’t want that” even if you never tried it before. Especially if it’s something you traditionally wouldn’t eat in your home country.
Anyway, thank you for the recipe on homemade instant miso! I will have to try it out! The other recipes looked good as well.

Excellent! I am Korean but I prefer the less salty and spicy flavors of Japanese food. And I love simple delicious recipes you can makes without too much trouble.

That's why in Germany the boiled eggs are painted with color, so that ppl differentiate between raw and cooked in the supermarket

This was a delight to watch. I love miso soup and now have it every morning. I need to make more of the miso soup balls because they're so helpful. I don't have fried tofu or wakame, so they're pretty basic, but I can't imagine not having a meal without some nourishing soup. I've recently been changing my lifestyle and have lost unwanted pounds, and I owe a lot of my success to having a Japanese style breakfast with soup, tamagoyaki, vegetables (I include my homemade ferments like sauerkraut, too), salted salmon (had that for the first time yesterday - YUM!), and a small amount of rice. I am currently on a serious hunt for natto! I am not able to make it at home and I live very far away from a good Asian market. I miss being able to stock it in my freezer.

Thank you for these videos! It can be hard to try/make homemade Japanese recipes when you are in a different country, because the ingredients may not be available in your area. I love that you use simple and fairly easy to find ingredients, because I can find most (if not all) of them even if I am in an area that doesn't have an Asian market. I also like that you show so many different ways to use the same ingredients. These videos are so helpful and fun. Thank you for sharing these recipes with us!

My husband and I love miso soup. We enjoy having it when we go out to eat sushi. The miso dama seems so easy to make. I hope I can find the ingredients needed online. The grocery stores in our town do not carry many authentic Japanese food items. I love your videos and your recipes. Makes me hungry when I watch them. 🥰😀

This is so funny - the opposite happened to me when buying eggs when I was on my trip in Japan. I wanted to buy a boiled egg for a snack from the Family Mart, but bought a raw one by mistake! The boiled ones I in Japan are so delicious.

hiii!~ i just made the salmon miso butter stir fry and OMG ITS SO GOODDD!!! 😭😭😭 i didn’t have sake so i used chinese cooking wine. it still turned out so delicious! even my dad who doesn’t really comment much about my cooking said it was good 🥹🫶🏻 it’s rainy season where i’m at right now, so this is the perfect stay-at-home comfort food! so warming and filling. thank you so much for this recipe, i’m so grateful! ❤❤❤
