It's been perfect weather these days, I often go to the park and enjoy the weather so much 🥳✨

Ingredients for one person 👇

*If you’re vegetarian, you can use kombu powder or shitake powder instead of bonito powder :)

🔽Yaki Udon (fried udon)
-1 pack udon
-1/4 onion
-1/2 carrot
-50g(1.8oz) cabbage
-1 slice bacon (or thin pork belly, sausage)
-1tbsp sake
-2tbsp soy sauce
-1/2 tsp bonito dashi powder
-bonito flakes
-dried green seaweed (aonori) *optional

🔽Kake udon (basic udon soup)
-1 pack udon
-230ml (1 US cup) water
-1 tsp bonito dashi powder
-1 tbsp soy sauce
-1/2 tsp mirin
-1/2 tsp sake
-spring onion
-Japanese red pepper *optional

🔽Curry udon
-1 pack udon
-3 mushrooms
-50g(1.8oz) cabbage
-250ml (1.1 US cup) water
-1/2 tsp bonito dashi powder
-1tbsp corn or potato starch
-1tbsp soy sauce
-1tbsp mirin
-some curry powder
-spring onion

🔽Napolitan udon (ketchup udon)
-1 pack udon
-1 slice bacon
-1/4 onion
-1/2 green paprika
-1/2 carrot
-3tbsp ketchup
-1tbsp tonkatsu sauce
-1tbsp milk
-10g (0.35oz) butter
-cheese for topping

🔽Creamy udon
-1 pack udon
-5 mushrooms
-1/4 onion
-10g (0.35oz) butter
-1tbsp corn or potato starch
-1/2 tsp bonito dashi powder
-200ml (0.85 US cup) milk
-1tbsp miso
-cheese for topping

★About seasonings

——Substitute for Mirin and Sake—-
If you can’t find mirin or sake in your city, you can substitute them like this👇

For 1 tbsp mirin use either:
1 tbsp sake + 1/2 tsp sugar
or
1 tbsp white wine + 1/2 tsp sugar

For 1 tbsp sake use:
1 tbsp mirin
or
1 tbsp white wine

It won’t be exactly the same, but still works 😋

——Substitute for bonito dash powder for vegetarians—-
You can try to find plant based dash powder, like kombu dash powder or shiitake dash powder.
However it might be a bit difficult to find them 😢😢

If you are vegetarian you can also change the bonito dashi powder for vegetable stock cubes/powder. It won't have the "fish" taste of the bonito or the "sea" taste from the kombu dashi, but it's also tasty! :)

I just bought a package of udon and was wondering what I should do with it. Thank you so much for these recipes! I actually enjoy using ketchup in stir-fry dishes, it gives a sweet and tangy tomato taste, quite addictive. As an Italian it will be fun to try this Neapolitan style udon.

I rarely write comments, but I'm soo happy that you gave the recipe for one person. Others make it for 4 or 2 portions and it's harder to change for one portion, so you really made my life easier with the ingredients.

I found your channel recently and became instantly amazed by how you present the recipes and the simplicity of it all, before watching your videos I would never even think that ramen could be something simple like the shoyu ramen and shio ramen you showed in another video, it quite honestly blew my mind and made me really happy to have these recipes added to my repertoar.

I love that you added the ketchup option! I lived in Okinawa and one of my favorite humans cooked for everyone most days and often did ketchup on the noodles. I did think it was weird until I tried it and it’s delicious. And he was a wonderful kind person so I would try anything he took the time to make for us.
My husband lived in Japan and calls ketchup noodles Japanese spaghetti so I’m happy I have a proper name for the dish now!

Hi Yuka 🙂 I wanted to let you know that I made the creamy mushroom udon, and I am really enjoying it. I bought some frozen udon from my Asian store and the chew it added to the creamy dish is really enjoyable. I also made your karage! Thank you for posting your recipes.
