You can achieve the same cuts into the potato if you place the potato onto the mouth of your wooden spoon. the sides of the mouth are naturally higher than the base so it won't cut through all the way. much easier process.

In sweden, where it's from, we make it with melted butter, breadcrumbs and almond flakes.

Butter makes everything taste wonderful.

I've made hasselback potatoes plenty of times, and every time, i've had to use the precision of a surgeon, to make sure I don't go all the way through. I never though of using a spoon to make sure it doesn't! Always learning hey, thanks Jamie :)

Years ago I did the "sliced up" potatoes a bit differently. Slice them same way, then put pats of butter between slices, then grated parmegano cheese. After baking, they also come out golden crispy outside and tender inside. Just a different way.

The only other thing I would add to the oil is garlic. Garlic and potatoes is just a glorious combo.

It of cause depends of the meat -but I love garlic and the sweetness of the garlic when it get a bit burned

*FYI:* _Hasselback Potato or Potato à la Hasselbacken (Swedish: Hasselbackspotatis) are a type of baked potato, where the potatoes are about halfway cut through into thin slices; butter, breadcrumbs, and almonds are added on top of the potatoes._

_Hasselbackspotatis was created in 1953 by Leif Elisson from Värmland, which was trainee chef at restaurant Hasselbacken on Djurgården in Stockholm._

Swede here, keeping it super simple... I only have butter, salt and breadcrumbs. But that's the beauty of it all, whatever you like goes! I usually have it to a filet mignon, and some herb butter (actually made my very own parsley butter this weekend, for the first time churning my own butter from cream).

Sigh, it's 1 AM and now I'm hungry again...
