RECIPE:
Ingredients:
4-6 potatoes
4 garlic cloves
1/2 stick (55g) butter
3 tablespoons olive oil
2-3 fresh thyme branches
Salt
Pepper
Fresh herbs for serving

Directions:
1. Heat oven to 200c/390f. Wash and try the potatoes.
2. Slice the potato into thin slices, leaving 1/4 inch at the bottom unsliced. You can use chop sticks or wooden spoons to prevent from slicing the potato all the way through.
3. Place the potatoes on a lined baking tray.
4. Make the butter: in a small saucepan over low heat melt butter with olive oil, garlic cloves and thyme. Cook until butter is melted, and the garlic is soft. About 3-4 minutes.
5. Brush the potatoes with half of the butter mixture. Sprinkle the potatoes generously with salt and pepper.
6. Bake the potatoes for 30 minutes, remove the pan from the oven. sprinkle with thyme or other herbs. Brush with the remaining butter. Bake for another 30 minutes or until potatoes are crispy on the edges.
7. Sprinkle with fresh herbs and serve.

Great tip about using 2 x wooden spoons. I put both in my mouth and bit down hard, making me concentrate & focus on not cutting all the way through the potato - brilliant!

Add salt and pepper to the butter when adding garlic and thyme. Instead of brushing the butter on just pick up potatoes and flip over and set in the butter and wiggle it around a bit. They will open up on their own by the time you butter them all.

Tip: you can use a single grain of rice in each slice to keep them open

Cooking tip:
Place the potato between two wooden spoons when cutting to keep from cutting too far down. This makes cutting faster and easier. Then, to paint with the butter, place potato across one wooden spoon and it will flare open and the butter will more easily flow between the slices.

Tip.. run a wooden or metal skewer lengthways through the bottom quarter of the spud, you can then cut down onto it for ease and consistent cuts.

Thank you so much for making a video that is easy to follow, Too the point! and with NO fluff, OR rah-rah! The choice of music was excellent!!
I'm just so tired of all the silly useless stories that waste so much time that so many use to try and get us to view their posting. I don't even click on them any more. I liked and subscribed, thanks again!!

They look very nice!
Another way to do it, is to cut much more slices in the potatoes and put some breadcrumbs on top of them. That`s the way I do them, (but my wife prefers them without the breadcrumbs). Greetings from Sweden!

This is a great side dish for Christmas. I already was making Mac n cheese and so I needed a potato side that didn't have a bunch of cheese like au graten...this was a great substitute
