I see so many people preparing potatoes for frying that miss a *crucial* step. After peeling/slicing/dicing, SOAK THEM IN COLD WATER. I prefer to do 2 soaks, a shorter one after a longer one. Soaking draws out extra starch, which holds water, so when they fry, they get crispier, and less "heavy" with oil.

For anyone thinking this is wasteful, just save the trimmings for mash or make some regular fries with the rest.
Just because you trim something, doesn’t mean it has to go to waste!
You can use carrot and celery tops for broth/stock, skins for compost, etc.

Just throw the trimmings in a baggie for later and enjoy the yummy fancy potatoes now and worry about the rest later!
