1. Bake a whole garlic bulb in the oven for 30 minutes at 200 °C (400 °F).
2. Put the baked garlic bulb in the water and boil it.
3. Once the water becomes yellowy and thick, mash the garlic.
4. Put in both ramen packets and the noodles, and do not eat or add the noodle crumbs yet!
5. Take out the garlic skin and squeeze the juice out.
6. When the noodles are cooked, add the white part of some green onions.
7. Garnish with the noodle crumbs.
8. Enjoy!

There’s a science behind this ramen recipe and the key here is whole roasted garlic. Garlic contains enzymes called Alliin which enhance and prolong flavor of any dishes. However, garlic also contains Alliinase which occurs naturally in the cells of garlic. When the garlic is crushed Alliinase will break down Alliin into smaller chains and produce the new compound called Allicin. Allicin is responsible for the spicy and pungent flavors of garlic. However, since the Alliin bonds are severed, crushed garlic will not have the flavor enhancing properties as the whole cloves garlic has.
Adding roasted whole cloves garlic will almost double the intensity of MSG that instant ramen contains (A LOT). It’s a very smart way to save yourself from Sodium overconsumption by not adding more or sacrificing any flavor.

Great recipe, I like that it's not crazy over the top, it just elevates regular ramen. Very nice. Also, Shin Black deserves more love here in the US!
