Easy Spicy Eggplant Stir Fry #veganrecipes

As many of you know, my husband doesn’t like eggplant, so I make this dish alllll for myself. It’s self care. This recipe is inspired by 魚香茄子 (fish-fragrant eggplant) and it’s truly one of my faves!

I use Chinese or Japanese eggplant for this dish because the seeds aren’t tough and those varieties of eggplant aren’t bitter.
