eggplant stir fry
Ingredients
- 2 large eggplants, cut into a chip-like shape
- 5 tbsp of olive oil
- 2 heaped tbsp of chilli oil
- 1 heaped tbsp of garlic +ginger paste
- 1 tsp of whole black peppercorns
- 1.5 tbsp of soy sauce
- 1 tbsp of sweet soy sauce
- salt, to taste
- 2 red chillies, sliced
- sliced kaffir lime leaves, to garnish
Method
1. To the olive oil add the chilli oil
2. Once the oils are hot, add the garlic + ginger paste and black peppercorns and sauté
3. Add the eggplant and coat with the oil
4. Add soy sauce and sweet soy sauce and season with salt
5. Mix well and simmer on low for about 15 minutes, or until the eggplant is tender
6. Garnish with red chilli and kaffir lime leaves
7. Enjoy!
