Spicy Eggplant Stir Fry
Serves 2

Ingredients
1 Tbsp chili oil
2 cloves garlic, chopped
1/4 of medium size onion, small diced (approximately 2 oz)
4 oz ground turkey (you can substitute to any other ground meat or firm tofu for vegetarian version)
1 large Asian eggplant, cut into half in lengthwise, then sliced into half-moon shape (approximately 10 to 12 oz)
2 Tbsp oyster sauce (you can substitute to vegetarian mushroom oyster sauce)
2 Tbsp chicken stock (you can substitute to vegetable stock)
1 tsp sugar
pinch of black pepper
1 red chili (you can substitute to other chili or red pepper for mild version)
2 green onions, chopped
1 tsp sesame seeds
1 tsp sesame oil

I know all the food you make is absolutely delicious but what really adds to the viewer reallizing that is when you eat each bite and see your expression and hear how good it really does taste. You are so lucky to know how to cook the way you do. Im gonna go to an asian store and buy some seasonings and start making some of your recipes.

As Indians we prepare eggplant in a very different way. till recently i had never known these type of preparations. but now a days i am into fusion food. n believe me, eggplant tastes really delicious these ways. thanks to u i learnt a new recipe today n i am sure this will be yummy too. will try soon.

this is sooo nostalgic! one of my favorite dishes my mom would make growing up. cannot wait to now make it myself and feel a bit more at home since i'm in the UK far away from my parents!

I just made this as i have 2 eggplant bushes that are just going crazy!!! This is absolutely a winner! I didn't add the meat but still was a 10/10 would cook it again. I recommend. Now in saying this try buying small eggplants if your buying the tear shaped ones because supermarket bought ones are bitter compared to freshly picked homegrown eggplant.
