Today we're making one of our all time favourites. The breakfast burrito has really taken off here in Ireland and for good reason. It packs a punch and keeps you fed until lunch. For those of you looking to increase protein this is the one for you, 50g of protein per burrito and this recipes makes 2! Let us know what you'd add to yours to make it pop in the comments!

I was surprised that you didn't use any black salt in the tofu eggs.. I make them at least once a week. I always use nutritional yeast and black salt.. I usually add some paprika, onion and garlic powder. Interesting how you both cut up the avocados differently.. Maybe you're not identical after all! 😉 If you are concerned about cutting your hand while slicing the avocados, you can always use a butter knife.

I made this recipe two days ago. TBH, it tasted a bit bland. Especially for a wrap, just not enough taste from the tofu and mashed beans. I don’t want to put too much salt, a bit of sweet chilly sauce saved the day. Also i recommend frying the tofu with a tbsp of oil . And fry the whiter part of scallion to release the flavour before adding the beans. Can use a bit more water if the mashed bean got too dry. It took me an hour overall. Thanks for the recipe. Overall, It’s a good recipe but needs some fine tuning. 👍🌻

Not disputing it's a reasonably quick meal to cook but hardly 10 minutes for an average cook when there were 2 of you making it and you had all the ingredients, utensils etc out and ready to go

50g of protein per portion or the whole dish? Tofu is about 8g per 100, cooked kidney beans are about 9 per 100. You said 200g of tofu, 100 per burrito (8g), that means you’d need 466g of kidney beans (two drained tins) per burrito to get 50g total!

The difference between a spring onion and a scallion and they are two different things. I do know that that's what they are called in some parts of the world, but technically a scallion is not a spring onion.
