vacuum sealing is so underrated. Last night i reheated some vacuum-sealed chashu pork belly from a month and a half ago sous vide and tossed it in my ramen. it was basically like i never froze it.
for those who aren't aware, the difference between vacuum seal frozen and regular frozen is there is little to no space or oxygen for moisture to travel and create frost, leading to freezer burn.

I knew a foster mom years ago who would make about 50 burritos a week, wrapped them in foil then in the freezer. She use to only have HS teenage boys, and would make so much food from scratch for them. They ate all of it!! They all loved her because she was very consistent in their life! I use to do the same, burritos 🌯 of all kinds!

I spent a 1, 000 dollars on a chest freezer, its already paid for itself in under a year in savings on buying bulk food instead of eating out or making expensive one off things or having to throw out perishables.

Freezers are my best friend. Having heaps of premade food in there is what gets me through severe depression and psychotic episodes.

I've been retired since 2012. With COVID I decided to cook meals in large quantities. Not much more work. I buy at COSTCO whole primal cuts of meat, I bake my bread, make soup a gallon at a time, pastrami, meat loaf. All portioned, vacuum packed, and frozen. I bought a chamber vacuum sealer and an Ankarsrum mixer. I use my freezer inventory list as a fine restaurant menu. I cook pork chops on the barbecue 20 at a time, packed with sauce made with smoked paprika and frozen, we have barbecue even in the depth of winter.

Another life tip that goes aloing with this. You can geta chest freezer in your basement and it uses virtually no energy to run thus paying for itself. Doesn't lose coldness when opened either (making it openable for power outages, grilling time!). You can store your excess frozen things in the chest freezer and just restock upstairs every so often to save freezer space.
