6. Opt- Onions

Heat up oil on med high.
Add garlic and saute for a quick minute
Add Meat and saute for a few and then turn heat up high and fry for 5 minutes.
Add Vinegar, Soy Sauce, and Black Pepper but dont stir! Just let it sit for about 10 minutes on med high.
After 10 Min stir occasionally and then lower heat to taste. Add soysauce or other flavors as desired. Then let it simmer for another 10 minutes on med high.
When the gravy (sabow) is a thin consistency (dribbling off spoon) then you add onions, stir the adobo, and turn the heat to high for 2 minutes.

Just tried this today after viewing a number of videos on Filipino adobo cooking. I like the no need to marinate, just saute meat in a lot of garlic, boil in vinegar about 1/4 cup per pound, salt with soy sauce to taste and spice with whole black pepper. I'm happy with the result - taste like adobo I liked as a kid.

Thank you Benji. My son had 3 bowls with his first adobo experience. He liked adding a bit of ketchup for sweetness. I'm going to teach my parents this easy yummy recipe

Thank you for sharing this wonderful recipe!! I'm recently married to a Filipino and have been practicing with adobos, sinigang and sisig. I followed Mama Nini's recipe excluding the peppers and simmered it a little longer. I think I finally found the perfect recipe :) Many thanks and blessing to you and your family.. keep em' coming!

Benji and Mom,   Am a retired engineer with some free time. I was looking for the easiest way to cook adobo last weekend and after watching a number of videos and reading receipts,   decided on your Mom's method,  simple,  straightforward and brief compared to others. It turned out great, "a great rice pusher" said one of my sons visiting :-).

My mum makes it so the sauce is very thick, almost like a runny caramel consistency. There's not a lot of liquid and everyone is always fighting to scrape the bottom of the pot! Lol. The sauce is the best part! Yummm!!!

Hey.. everyone has his own style of cooking.. and it helps promote whatever kind of Filipino food you are cooking.. Good thing is Pinoy will always be known to be good in authentic cuisines .

just some tips.
-all adobo has Bay leaves for that adobo taste... dont forget it guys :)
-and if u want it to be abit more sweeter some people add pineapple or a tbsp or 2 of brown sugar :)
-add potatoes if you want the sauce to be abit more thicker.
