Pork Adobo

Ingredients
- 2 lbs pork belly with skin(cubed)
- 15 cloves garlic(smashed)
- 1 tbsp whole black peppercorns
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1 cup water
- 5 bay leaves
- 1 tbsp brown sugar
- Salt to taste

Instructions
1. In a heavy bottom pot, sear the pork belly on medium high heat until browned.
2. Add garlic and black pepper and cook for 2-3 minutes until fragrant.
3. Add soy sauce, vinegar, water, bay leaves, and brown sugar.
4. Bring to a simmer and cook with the lid slightly off for an hour and a half or until the pork belly is tender. You can test if it is ready by poking the pork skin with a chopstick. If you can easily puncture the skin, the adobo is ready.
5. Serve with rice.

Try marinating pork with soy sauce, pineapple juice, pepper, garlic and bay leaves for about 2 hours, the longerthe better..like 1/2 cup of soy and 1/4 cup of pineapple, then later add vinegar. Brown the pork for about 10 min, then add the sauce. Let the fat render...i use to do the adobo like how he it but the key this time is pineapple juice.

The fact that you have used soy sauce and brown sugar suggests that you are using the Hong Shao Rou recipe 红烧肉. Pork Adobo must be the Filipino name.

It might have spread to the Filipino Chinese community.
