I love everything about this. My family and I have been eating costco’s fresh, farm raised salmon for decades. We love to eat it sliced and eaten with rice and wrapped in seaweed before dipping it in soy sauce. Honestly, I can’t tell you how many times we rave about it.

Thank you for the educational breakdown because I will be sending this to all the skeptics when I tell them I’m eating costco salmon raw ❤

An interesting thought: People have conducted studies on fish sold at a supermarket, and found that up to roughly 20% of the type of fish that customers were being sold was incorrectly labelled e.g. customers being sold Rainbow Trout where it was labelled as Salmon. Supposedly, this percentage can increase when purchasing sashimi from sushi restaurants.
This gets really sketchy when you consider specific cases like fish that is labelled as "white tuna" (which you would presume would be albacore) was actually escolar (can cause gastrointesinal distress).
Also fun fact: Escolar being sold as white tuna is legally permissible.

Flash frozen gives me peace to cook to decent temp and keep it tender and juicy. But Im paranoid so I just dont eat any fish raw on purpose anymore. Its not even the fish im skeptical about, but the handlers lol. Like you said its a gamble either way though.

What about open pen fish farms that are raised in waters that are shared with wild fish? Genuinely asking because that's how a lot of fish are raised where I'm from 😢

While Costco is great for raw salmon, Aldi has frozen tuna steaks that have been incredible for pokebowls

Thank you for the explanation on what is considered safe to consume raw. I just visited Japan recently, and many of their fish markets serve fresh sashimi and sushi with fish brought in directly from deep sea fishing boats. In this case, the fish is wild caught; sure it’s fresh, but how do they limit the possibility for parasites?
Not sure you know the answer, just food for thought.

Fresh wild caught alaskan salmon is so tasty, you can even taste the difference between hatchery fish and wild salmon runs. Don’t eat it raw though.
