This is why in Japan it takes years to become a sushi chef. I only will eat from a reputable place. Sushi fish is flash frozen, or certain fishes cured in salt or marinated in a vinegar... there are many things sushi chefs do for safety. Sushi wouldn't be as popular and a long lasting tradition if people were dropping like flies left and right getting sick. Obviously there is risk in anything but I will still be eating sushi! I've gotten food poisoning from a continental breakfast at a hotel and from diner food but have yet to get sick from sushi. Food temperature and preparation standards are always important to adhere too.

literally nothing can keep me away from sushi. and i hate to be that person but ive been eating it for over a decade now and nothing bad has ever happened lmao. just dont get sushi from the gas station

Tbh you can get sick from *any* food when it's not being handled properly. Sashimi (proper term for raw fish, sushi itself is not) is not inherently dangerous to be consumed, it all depends on where'd you get it from

Sushi only refers to the rice mixture used. Sushi can be made with anything. Not just fish, and not just raw fish. Raw fish (or other meat sliced and served in this fashion) is called sashimi. Sushi can be 100% vegan. It doesn't have to contain fish or animal products at all.

If you're worried about fish, just eat egg or vegetable sushi.

Edit: I really don't like this fearmongering.

I strongly suggest to only eat seafood (and honestly anything) from reputable places.

If you’re going to eat sushi I’d suggest going to a reputable / higher end restaurant. It’s expensive but the fish quality is so much better and these restaurants usually have extensively trained sushi chefs.

Good thing sushi in the EU has to pass a series of strict quality controls before being approved for consumption in both markets and restaurants. News like this would unleash a scandal of unprecedented proportions, to say the least.

It should be noted that sushi is not always raw fish/seafood. Sushi is sushi because of the vinegared/seasoned rice. Thus two of my favorite kind of sushi are egg omelette and cucumber :D there’s also chirashi zushi which has lots of variety in toppings including vegetables! So if you don’t like raw stuff, you can still eat sushi :)!!

So my father is a sushi chef and I just wanna confirm out there that it’s not very common to come across these. Sushi chef’s are trained to spot these and eliminate them in an instant. With that being said, don’t settle for cheap sushi spots and you’ll be golden.

I think "Doctor" Youn needs to atleast read up on food code before giving the advice of dietitian. Food code 3-402.11 "requires that fish that is served raw or undercooked be frozen for the destruction of parasites." This practice is also within Japan's health codes as well.

California roll and eel are cooked, plus there's vegetarian sushi. Edit: but yeah I knew an alcoholic who'd eat raw fish and call it sushi lol. Warnings!

I feel like this has to be an American thing... I live in Germany and there is no way in hell that health regulations would ever Ever let that slide. I could be wrong tho

They also deep freeze the fish-required by law-at a temp low enough to kill off these parasites. Some fish have parasites that don't die due to deep freeze, which is why you never see raw sushi of fish like cod.

As a sushi chef this is completely wrong. Any fish we get from overseas are thoroughly inspected at highly rated facilities and previously frozen at least once before being shipped to us. We also cut and inspect our fishes before we even prepare it to serve. If we were to ever find a parasite, we toss the entire fish and decontaminate our kitchen. Out of my entire decade of being a sushi chef, this has only happened once. We don't ever just take it out and serve it to you.

I've also never gotten sick from eating sushi but the 2 times I've gotten food poisoning were from COOKED chicken at restaurants.

He's talking about anisakis parasites. They won't kill you, but they aren't very pleasant. They're often found in mackerel and yellowtail, but are easily killed with a quick deep freeze and/or vinegar wash.

It is mandatory to have fish served for sushi to be frozen at least 7 days. As a sushi chef, this is basic knowledge. We can not served fresh caught fish to customer. In my 30 years as sushi chef I never found any worm in any fish I served. So I don't know what he talking about. If you dont like sushi, it is fine by me, but don't scare people like that.
