Salmon sashimi is really delicious, but there are several important facts you should be aware of before eating it. In this fish recipe video, we demonstrate how to prepare your salmon properly if you choose to eat it raw. We use freshly caught chinook salmon in BC Canada.

I ate it fresh from the ocean once and it was the best tasting sashimi I ever had..

6:38. Another tip. Since you already have a long knife, use it to your advantage. DO NOT cut the meat in a saw-motion. Cut it in one stroke, by using the whole blade. :-) I learnt this by experience, with 12 years experience in total, filetting Salmon at work.

Thank you for sharing. Some good points in there! I'm not sure if other comments mentioned this, but sashimi was traditionally small (i.e. thin) so that it could be held up to a light and checked for parasites, and could be eaten fresh. Also, when cutting your salmon, cutting against the grain will result in a more pleasant experience. I noticed you cut with the grain, which is fine, but perhaps more difficult/less pleasant to consume. Thanks again!

So to make sure I’m getting this all right:

1) buy the salmon fresh from a reputable fish marketplace

2) bring it home and vacuum seal and freeze for 10 days

3) unthaw, and remove the skin and excess bones

4) slice and enjoy?

Cut the skin in strips and roast them in an oven( toaster-oven) until crispy. It makes. awesome filling for sushi roll or cone

I'm gonna try this but with a whole salmon fillet. I once had craving for salmon fillets but raw. I washed them clean first and then froze them for 2 weeks because I read about the freezing the parasites to death. I then thawed it out overnight because the fish pieces were huge and I just chowed down on both of the pieces whole like a bear. Not so elegant but so worth the cravings.

Can you explain how best to thaw sushi grade salmon? Is it the same way you would for tuna (salt water bath + paper towels)?

I live by the st.josephs river in indiana near south bend and its famous for its salmon and steelhead a few years back we were fishing next to a guy fly fishing for steelhead he caught one about 6 pounds he got the hook out of its mouth fileted it and ate it right there on the shore as raw as it can be

Hey Rod how do you bring the salmon from frozen to unfrozen when doing this? Personally I would put it in the fridge for a day but I know that bacteria probably starts to grow after a period of time if you leave it to long.
