1 teaspoon (5g) baking soda
¼ teaspoon (2g) salt
6 tablespoons (90g) all natural peanut butter or any nut butter of choice
6 tablespoons (82g) melted coconut oil or unsalted butter
⅓ cup (65g) brown or white erythritol
1 teaspoon (5mL) vanilla extract
1 large egg at room temperature
1 large egg white at room temperature
2 ounces (60g) sugar-free chocolate chips

Freeze the dough for 20 minutes.
Bake at 350°F (177°C) for 15-20 minutes.

Yields 14 cookies (macros per cookie)

I used macademia nut butter = exquisite!
Also, not knowing what 2 oz of chips looks like, I used half a bag of chips. That worked. :)

Made the coconut oil variation of these today and they are pretty good - the texture is a little like a macaron but I guess that depends upon the fineness of the coconut flour that you use. I didn't substitute anything but used just 50g of Monk Fruit sweetener. I also weighed them as I rolled the dough and I made 10 cookies at 40g each. Per cookie, this works out at:
165 cals
2.4g carbs
14.7g fat
3.8g protein
Looking forward to making them again with unsalted butter and better quality keto choc chips. Thanks for the recipe!

Just mixed it, up put in freezer !took a lick of the batter left in the bowl! My tastes buds got an explosion 💥 delicious!! Brown swerve sure works well with these ingredients! 👍
